I absolutely love this fresh spinach salad recipe. There’s something about the combination of greens with the sweet berries and slight citrus flavor from the vinaigrette. It’s a family favorite! Enjoy!
1/4 cup extra virgin olive oil
1/3 cup raspberry vinegar
2 tbsp orange juice (freshly squeezed)
sea salt & pepper, to taste
1/4 cup fresh chives, chopped
4 cups raw spinach
2 cups strawberries, quartered
1/2 cup sliced almonds, toasted
1/2 cup feta cheese
4 four ounce tilapia filets, grilled (this is totally optional, and you can sub it out for grilled chicken breast if you like, too!)
Make vinaigrette by combining olive oil, raspberry vinegar, orange juice, sea salt, pepper and chives. Blend with a whisk. Toss spinach, strawberries, almonds and feta cheese with just enough vinaigrette to coat lightly. Top with optional protein.
