1. Preheat oven to 450.
  2. Chop zucchini and/or yellow squash and put into large bowl.
  3. Drizzle avocado oil or melted butter over squash, just enough to coat
  4. Add mineral salt and pepper to taste
  5. Pour squash into roasting pan and spread it out evenly.
  6. Bake 15 to 20 minutes, stirring once until cooked through.
